Juicy chicken breasts, bacon, cheese and BBQ sauce – what a match made in heaven!
Served with mashed potato and broccoli or chips and salad if you prefer, this dinner is a family favourite and a midweek winner for sure.
Ingredients:
Serving four
- 4 chicken breasts
- 8 rashers bacon
- 240ml BBQ sauce – can use shop bought, or homemade
- 100g grated cheese
Method:
Preheat oven to 400F / 200c / 180c if fan assisted
Wrap two rashers of bacon around each chicken breast and place into a shallow baking dish, with the ends of the bacon on the bottom of the dish – this is to keep the bacon nice and tightly wrapped around the chicken.
Place in the oven for 20-25 minutes until the chicken is cooked – test by checking the thickest part of one of the breasts; if still pink, it needs to be cooked a little longer.
Pour the BBQ sauce over the chicken breasts evenly
Add the grated cheese over the chicken breasts and sauce
Return to the oven and cook for a further 5 minutes, or until the cheese has melted
Serve with mash and veg, or chips and salad.
If portioning up to save for later, wait until completely cooled before placing in an air tight containers and into the fridge.
