Perfect for this hot weather, our Pea & Ham Pasta recipe is a family favourite, but also works brilliantly cold the next day for lunches!
Simple and easy to cook and a great recipe to get the kids involved in, this can be expanded as you wish and is a great way to use veg that is going out of date.
Ingredients:
400g dried pasta of choice
200g frozen peas
100g mushrooms
2 cloves garlic, diced
200g cream cheese
200g cooked gammon ham
Olive oil
Parmesan cheese, if desired
Method:
Bring water to the boil and add pasta, cook according to the packet
Chop the garlic and mushrooms and fry off with some olive oil
Chop the ham and set aside for later
When the pasta is almost cooked, add in the frozen peas and cook for another few minutes
Once the pasta and peas are cooked, use a cup to reserve some of the pasta water and then drain the rest
Add the garlic mushrooms and ham to the pasta and peas and stir well.
Add the cream cheese and some of the reserved pasta water, adding a little at a time whilst stirring. The residual heat from the pasta will melt the cream cheese and the pasta water will help to thin the sauce and give an even coating over all the pasta.
Once mixed well, serve into pasta bowls and finish with a sprinkle of parmesan, or any other cheese if desired
