Boneless Shin Of Beef – Sliced

The Boneless Shin is extracted from the fore and hind parts of an animal's legs. As an overworked muscle of the cow, the meat here is typically tougher than the prime cuts, but the connective tissue breaks down and leaves a  lovely deep rich flavor, and when cooked low and slow, really can be melt in the mouth tender.

Short Rib Of Beef

Short ribs are taken from the short plate between the brisket and flank. The flavorsome fat and connective tissue from the short rib means that beef short ribs need long, slow cooking in order to become tender.
