Fast, tasty and filling – perfect for a midweek dinner when you’ve had one of *those* days and you just want to settle down with your feet up!
Whip up this family favourite in no time at all and save any leftovers for lunch the next day, or to be frozen for a future meal.
Ingredients:
8x quality sausages – we’ve used Pork, Leek & Garlic Sausages for the extra flavour
2x onions, finely chopped
4x garlic cloves, finely chopped (or to taste)
1x large broccoli, washed and chopped into small florets
500g dried pasta – family favourite will do
50g grated cheese
2 tbsp oil
salt and pepper for seasoning
chilli flakes, optional but adds a nice punch!
Method:
Chop the sausages into bite-sized pieces
Add the onions and garlic to a frying pan with the oil – fry until golden and fragrant. Add the sausage pieces and fry until cooked. Don’t worry about anything sticking to the pan, as the pasta and water will remove these delicious golden sticky bits!
Bring some water to a boil and add the pasta when ready. When halfway through the cooking time, add the broccoli florets till both the pasta and broccoli are cooked.
When cooked, reserve a cup of the pasta water and drain
Add the pasta and broccoli to the pan with the sausages and mix well, adding the pasta water a little at a time to help to loosen everything up. Finish by stirring the cheese through, finishing with the chilli flakes (if using) and salt and pepper.
Serve and enjoy!
This pasta dish also works well with some frozen garden peas or mushrooms if you want to add more veg to it.
